  • 4 wine tomatoes

Pasta sicilian style Directions

Chop aubergines, courgettes and peppers and season with salt to release the water, better if the day before. Cook the vegetables in the oven at 200 degrees with a drizzle of olive oil (for a better result you can use an halogen cooker). When cooked drizzle with balsamic vinegar and 1 tsp of olive oil. Peel, chop and deseed the tomatoes with the spring onions and season with salt to release the water. Cook the pasta for the time indicated by the producer. Add all the ingredients with some leaves of basil. Add some olive oil.
